SPAGHETTI

Wild Word Friday!

As I’ve mentioned in a few other posts, our summers are hectic. Maybe I should say crazy. It’s not unusual for us to extend our table to seat more than twenty for multiple meals. It’s a great time, but to tell the truth without SPAGHETTI I’d be lost!

A meal of SPAGHETTI helps out the pocketbook, is relatively easy to prepare and pleases almost everyone, kids included. (Unfortunately, not my 91-year-old father-in-law. He doesn’t like pasta, but he is a stoic, and he stoically accepts a few feeds of SPAGHETTI during the summer.)

The word SPAGHETTI comes to us from the Italian (surprise, surprise) and was once a plural form of their word for string –  spaghetto – a diminutive of spago, which means cord. A kinship relationship exists with the Sardinian word ispau, which also means cord or string.

I love the aroma of SPAGHETTI sauce simmering during the day, and this crockpot version works well for me.

Sue’s Simple SPAGHETTI Sauce

Dump into your crockpot:

2 – 14.5 oz. cans of diced tomatoes; 1 – 6 oz. can tomato paste; 2 Tablespoons sugar; 2 Tablespoons oregano; 1/2 teaspoon thyme; 1 teaspoons salt; 1/4 teaspoon pepper.

Add: 1 pound of hamburger, browned with one medium onion, chopped. Mix well.

On top of the tomato mix place three cloves of garlic and one bay leaf.

Cover and simmer on low for up to 6 hours. Before serving remove garlic cloves and bay leaf.

Serves 6 to 8. (You can quadruple this recipe if you have a big enough crockpot!)

  1. Nutmeg. Sounds crazy, but it adds such an unusual, distinctive, pleasing variation to spaghetti sauce! Kind’a sweet and exotic~ I picked it up some time ago, at the Christmas party of Lisa Murkowski, our State Senator…she and her husband own(ed?) an Italian Restaurant, and they put nutmeg in their sauce, and that’s what we ate at the party…
